The flavor of Black Cardamom is very unique, and isn't sweet like regular cardamom, but is more sour or pungent. This accents the underlying 'curry' of cinnamon, coriander, cumin, and turmeric.
Ingredients:
1 Onion, diced
1 cup of Green Beans, cut into inch-long pieces
3 Potatoes, peeled and cubed
2 Carrots cut into half-coins
3 Tbsp oil or ghee
1 Tbsp Tomato Paste
1/2 cup of coriander leaves
Spice Mixture:
3 Black Cardamom pods
1/2 Cinnamon Stick
1/4 tsp Turmeric
1 tsp Cumin Powder
1 Tbsp Coriander Powder
1/8 tsp Cayenne Pepper
1 tsp Salt
Preparation:
1. Steam the beans for 10 minutes.
2. While the beans are steaming, cut up the onion, potatoes, and carrots.
3. Prepare the spice mixture
4. In a medium-sized pot, add the oil or ghee, and heat on high, and then add onions. Fry for 2 minutes.
5. Add potatoes and carrots. Fry for another 2 minutes.
6. Stir in the spice mixture and fry for 30 seconds.
7. Add 1 cup of hot water and the tomato paste. Cook covered on medium heat for 10 minutes, until vegetables are tender.
8. Add the steamed beans and washed and the chopped coriander leaves.
