TacoTime Canada Salsa

Ingredients:

• 4–5 ripe roma tomatoes, coarsely chopped

• 1/4 medium white onion, chopped

• 1 clove garlic

• 1/4 cup fresh cilantro

• 1 tablespoon lime juice

• 1 tablespoon white vinegar (for signature tang)

• 1 teaspoon sugar (balances acidity)

• 3/4 teaspoon salt

• 1/2 small jalapeño or a pinch of red chili flakes (adjust heat to taste)

• Optional: 1/8 teaspoon cumin or smoked paprika (for extra flavor depth)

Instructions:

1. Combine tomatoes, onion, garlic, cilantro, lime juice, and vinegar in a food processor or blender.

2. Pulse gently until blended but still slightly chunky—TacoTime salsa is very smooth with a little texture.

3. Mix in salt, sugar, and seasonings. Let the salsa sit for 15–30 minutes to let the flavors round out.

4. Adjust salt, vinegar, or jalapeño to taste.

Notes:

• The vinegar is key to matching the tang you get in Canadian TacoTime salsa.

• Skip canned tomatoes—fresh gives it that unmistakable brightness and clean flavor.

• Some fans even report a faint sweetness, which the sugar helps replicate subtly without making it sweet.
